One of the most popular styles that one can easily try at home is Lemon Rice. In this, cooked rice is seasoned with spices and lemon juice and makes for a filling, tangy and flavourful dish. 2 tbsp peanut oil, 1 cup kolum rice, 1 tsp mustard seeds, 1 sprig curry leaves, 2 dry red chillies, 3 green chillies, 3-5 cashew nuts, 8-10 peanuts, 1 tsp turmeric powder, 1 tsp whole black gram, 1 tsp chana dal, salt to taste, and 2 tbsp lemon juice.

First of all, wash and cook kolum rice using enough water. Once done, strain the excess water and set the rice aside to cool down.

In a kadhai, heat peanut oil and add mustard seeds, whole black gram, and chana dal. Let them get nutty brown.

Now add curry leaves, dry red chillies, green chilies and sauté for a minute or two.

Next, add the cashew nuts, peanuts, and sauté until light golden brown. Switch off the flame, and then add turmeric powder, salt, and lemon juice. Mix well.

Add the cooked rice and mix it gently. Switch on the flame and cook for 2-3 minutes.

Next, add salt to taste, mix well, and cook for another 2-4 minutes or until done.
